The Maintenance Menu is activated by holding down the OK button while booting the Zaurus (hold down OK until the menu appears).
Menu text is in Japanese. Following is a translation or the menu screens displayed for a ROM update/flash (screen captures obtained from a Zaurus model SL-C1000):

The Service Menu
You'll want to choose option 4, Flash/Update.
Pressing OK will take you back to the previous screen. Make sure you plug your Z in before continuing.
Warning: Flashing will erase everything on your Zaurus. Make sure you've backed up first and you know what you're doing. Are you certain you want to do this?
If you are certain, press "Y" to continue.
NOTE: Installing some non-Sharp ROMs, such as pdaXrom's U-Boot boot loader, destroys the Maintenance Menu. The menu utility can be recovered with a NAND restore, though this would destroy the installed non-Sharp ROM.
