Is it possible to make a live-SD card? you know something similar to knoppix, so I could test new roms w/out having to re-flash? Is it possible to put debian on the SL-5500? I've seen some threads about debian on the C3x00, and stuff like that, but nothing on the SL-5500. Thoughts?

check out the prepSD.sh scripts that derekp made for the kompany 64-0 ROM. you may also want to look at the 64-0 cacko 5500 ROM. Both of these allow you to run from the SD card, dunno for sure how reboots are handled.
Good luck

Try these:
Debian on the Sharp Zaurus/SL-5xxx (http://people.debian.org/~mdz/zaurus/)
Pocket Workstation - Debian on Handhelds (http://pocketworkstation.org/)
