I seem to have got my head round installing things, using various packages (this is in cacko 1.23) but I can't for the life of me figure out how to run them. I would like to set it up so I can launch them graphically using an icon. For instance I just installed ZBedict, but I've no idea how to start it at all. The installation all seemed fine.

if the install went fine, you should have a zbedic icon. reeboot your z (just in case) and look for the icon. if it isn't there, then something went thoroughly wrong.

Did you install the static version of the ZBedict? If no - you have to find and install some extra packages. Without them it just show the flush on the icon, but starts nothing.

I use Cacko 1.23 on a C3100
If you are using zbedic_1.1-0_arm.ipk, it has a "depends"
(This is a required software or library to enable zbdict to run).
Below is quoted from the webpage where I downloaded zbedic_1.1-0_arm.ipk,

Depends: sqlite3 library
Install sqlite3_3.2.2_arm.ipk if it is not already installed
------------------------------------------------------------------
Also you'll need a "dictionary file"
I use English, so I'm using the following:
zbedic-English dictionary_0.9.0-1_any.ipk
