Hello!
I have a SL-5500G with 3 year old OpenZaurus package installed (opie 0.9.3, OZ3.2).
I am looking for a way to backup all the internal memory (kernel, root fs, what else?) as an flash-able image. The idea is, to have a initrd and a kernel file which I can use to restore the current state by reflashing my Z.

One way of doing what you want is to find out how to make a NAND backup and how to restore one. Search the forum and you'll find more threads than you can cope with. You might also take a look on the Trisoft site. There are various howtos there also.

The other approach is to look for initrd and zImage files for the rom you prefer and then to use the backup/restore program that most roms possess.
As you can see from my sig I have settled for the tkcROM for my 5500s. I found the Sharp 3.10 and 3.13 roms to be pretty useful but the OZ/OPIE varieties gave me lots of hassles. There is a pdaxrom available for the 5500 and if you like tinkering/hacking you might like that.
