What is the best filesystem for a flash device (sd card)?

It depends what you want to use it for. If you have other devices like mobile, cameras, windows pc and want to use the SD in each of those devices for sharing and transferring files, then FAT/FAT32 would be the best for compatability. If however you are going to use the SD exclusively in your Z, then ext2/3 would probably the best since it is natively supported on the Z and also has more features than FAT.

In addition ext2/3 would be better if you use programs which need the additional ext2 features, such as file access date (in addition to modification date) and file access rights. For example mutt has some problems storing its mailbox files on a FAT file system. Other programs might have problems as well.
That's one of the two reasons why I moved my mail folders to SD with ext2 instead of storing them on hdd3.
