Does anyone know of a way to disable and/or change the sound made when activating the voice assistant with the silver button or Fn+Space? I find it obnoxious, and Saiy has a perfectly fine customisable greeting.

Prefer Siay over stock voice assistant for that same reason.

Is it possible to trigger something else from the button?

Termux provides a command which will listen and then output the result as text, in much the same way as an assistant.  (termux-speech-to-text, in the Termux:API add-on.)  So it'd be easy to write a basic assistant of your own, as a simple script with personalised actions.  The only problem would be triggering it…
