Timezone And Time...

I accidently clicked cancel when the timezone window came up on first boot.
Later I install the America timezone package just to be safe.
I tired changing the timezone through the GUI, but changes didn't seem to stick.
I tried making a symbolic from the Wininpeg zone to /etc/localtime
   -this sets the right timezone even after a reboot, but the time is wrong after a reboot.
   -when I use the date command to correct the time it changes the timezone to CDT
I tried using the GUI to change the timezone, but it doesn't change anything even after a logout and log back in.
Can someone give me guidence on this, please?

My misunderstanding of the how the timezones work lead me into believing that my blessed OZ install was faulty. It was not. The user was faulty.  I was trying to fix something that wasn't broken.
Installing the timezome package, making the symbolic link, doing a: ntpdate time.handhelds.org and ignoring what the GUI says is all that's needed.
