I can SSH into my OZ 3.5.1 Zaurus but SFTP will not connect. Any ideas? I thought all you needed was SSH running on the Zaurus to SFTP. I'm using FileZilla as my client.

dropbear doesn't support SFTP, you have to use SCP (or install the OpenSSH package from the feed/updated feed).
