I would imagine it would run, you'd gain a lot of spare flash space, and your hard drive would be in use... however, if you set up flash partitions correctly, you could probably copy over the hdd contents to a spare flash partition, and change the mount points... depends how much data is on hdd whether this would work.
Better bet would be to do the install, take a complete copy, then build your own ROM image with everything in squashfs so mounted read-only, and then use unionfs to overlay a read-write layer in either flash or hard drive (or both :-), and thus avoid all the symlinks that are the downside of cacko.
{I don't know enough about building a zaurus rom otherwise I'd do it myself}
