A couple of things here. Most of what you want can be done with the basic SHARP ROM and its associated Qt GUI. You could try Open Zaurus ROM (3.5.2) and its Opie GUI, but it is still a bit unstable and needs some understanding of linux file structure etc.
The Mac OS X sync is the issue in both of the above cases. The SL5600 was only supplied with PC sync S/W. However there is a site that has got "ZMacSync" running, but it is still in its infancy but will do simple PIM syncs. And the latest version of TrollTech's Qtopia Desktop syncs with OZ/Opie. Their FAQ claims they would be releasing a ROM in the last Q of last year, but I didn't find it on their site. There is more info here:

Currently I have OZ/Opie, but I am trying others before I settle on one. So far, I do not like the dependency issues I have had with OS/Opie.
I have a PC that I use for a game box (I know, the horror!), so I am not so concerned about the sync issues, as my PIM data is really in my smart phone. I want the Zaurus as something more than an iPod/something less than a laptop.
