hmmm...Someone can correct me, but two solar panels connected in parallel should be able to handle the load (1 amp). You would have to put some SCRs in to prevent reverse flow from one panel to the next.

Yup, parallel and/or series is fine. You either increase the voltage (series) or increase the current (parallel). Or any combination of the two.
I think you mean diodes, not SCR's. And you really just need one so the you don't reverse bias the solar cell in the dark.
This is cute, all it takes is a small solar cell, a water cooler, and a large fresnel lense
